  1. Week 51: Chocolate Butterscotch Bowl Cake

December 30, 2012 by Nina Spezzaferro

    finished bowl cake

A few months ago I “baked” a Coffee Cake in a Mug. It’s a very practical recipe to have on hand. It’s easy, whips up in minutes, and really hits the spot when you need something sweet.

I wanted to make something else in the same vein. It’s snowed three times this past week in the New York area. It’s gonna be a loooong winter. And a quick, easy cake recipe can come in handy when you’re stuck indoors due to bad weather. This bowl cake serves 1 generously or 2 with a more modest appetite. And you likely have the ingredients in the cupboard. (more…)

  2. Week 48: Bûche de Noël

December 30, 2012 by Nina Spezzaferro

    finished buche de noel

THIS cake is the piece de resistance of this project. At least I was hoping it’d be. Two years ago I attempted to make a Bûche de Noël. It was a disaster. Crafting a successful Bûche was an obvious goal for this year. I used a recipe I found on the Food Network website, which is accompanied by video clips from the show it originally aired on. The videos are very helpful, but I still think Nick Malgieri makes the assembly look WAY easier than it actually is. (more…)

  3. Week 47: Red Wine Chocolate Cake

December 27, 2012 by Nina Spezzaferro

    finished red wine cake

I was supposed to make a red wine chocolate cake a long, long time ago. I originally planned to make it for Valentine’s Day and I injured myself in the process. But I bravely returned to the recipe I hoped to use 10 months ago. Smitten Kitchen Deb’s red wine chocolate cake recipe is accompanied by a very sweet story about her lack of a 9/11 story, which is actually a lovely “story” if you ask me. (more…)

  4. Week 43: Eggnog Basket of Candies Cake

December 18, 2012 by Nina Spezzaferro

This one looks pretty good, huh? You can use this decorating technique with any two-layer cake. I’ll show you how I made mine festive for the holiday season using an eggnog recipe. (more…)

  5. Week 42: Mocha Chocolate Chip Icebox Cake

December 18, 2012 by Nina Spezzaferro

My last attempt at an icebox cake didn’t turn out so great. So I wanted a second chance to make a good one. During the summer I researched a lot of icebox cake recipes. The classic icebox cake recipe, on the box of Nabisco Classic Chocolate Wafers package, is a great one. But I’ve done that before. I wanted to do something different. And since it’s the holiday season, I wanted to do something festive. Since cookies are so popular this time of year, why not make a cake out of them? (more…)

  6. Week 34: Black Forest Earthquake Cake

October 27, 2012 by Nina Spezzaferro

Traditionally this type of cake is called a “dump cake”. I was lamenting to a friend that I couldn’t give my cake such a hideous title and he informed me his mom called this type of cake an “earthquake cake”. Doesn’t that sound SO much more appetizing than a dump cake? Hence, this is an earthquake cake. (more…)

  7. Week 33: Coffee Cake in a Mug

October 6, 2012 by Nina Spezzaferro

We’ve all been in this position before. You’re home. You want some cake, but you don’t want to deal with the burden of a whole cake lurking in the kitchen. Cupcake? Nahh. Try mug cake! Have you heard of mug cake? A simple Google search or a browse through Pinterest will reveal single serving recipes of carrot cake, chocolate cake, vanilla cake, you name it.  (more…)

  8. Week 28: Flourless Chili Chocolate Cake

August 19, 2012 by Nina Spezzaferro

A few months ago I baked a flourless chocolate cake. As I noted in that post, the recipe came highly recommended by my friend, Linda, who baked my Dr. Devil’s Food Cake for James Earl Jones. And she got the recipe from her friend, Lynne Silver. It was delightful. So when I wanted to make a chili chocolate cake, doing a flourless version based on that recipe seemed logical. (more…)

  9. Week 27: Tunnel of Fudge Cake

August 17, 2012 by Nina Spezzaferro

A few weekends ago my boyfriend, Chris, and I spent the weekend in Bridgehampton. I know, we’re very chic people. Anyway, I needed a cake to bring to our hosts’ home that would survive the train trip so I chose my go-to when a cake needs to travel – a Bundt! (more…)

  10. Week 24: Pistachio Cake

July 10, 2012 by Nina Spezzaferro

I am especially proud of this cake. I think it turned out beautifully and tasted great too. I owed my dad a belated Father’s Day cake since I was out of town on Dad’s Day. Pistachio is one of my dad’s favorite flavors, so I had no doubt this one would be a hit. And based on my previous experience with using yellow cake mix as a base (Beer Cake and Irish Cream Cake), I knew this recipe would yield a super moist and tasty treat. The only change I made was adding a full tablespoon of almond extract instead of the called for 1/2 teaspoon. (more…)
