  1. Week 33: Coffee Cake in a Mug

October 6, 2012 by Nina Spezzaferro

We’ve all been in this position before. You’re home. You want some cake, but you don’t want to deal with the burden of a whole cake lurking in the kitchen. Cupcake? Nahh. Try mug cake! Have you heard of mug cake? A simple Google search or a browse through Pinterest will reveal single serving recipes of carrot cake, chocolate cake, vanilla cake, you name it.  (more…)

  2. Week 32: Pop-Tart Filled Cake

September 30, 2012 by Nina Spezzaferro

I have to say, you haven’t truly lived until you bake six Pop-Tarts into a yellow cake loaf and then nearly eat the whole thing in a weekend. And I don’t regret it one bit(e).  (more…)

  3. Week 31: Pineapple Icebox Cake

September 19, 2012 by Nina Spezzaferro

“Baking” this icebox cake was a lesson in reading directions, not just skimming them, but reading them carefully. I didn’t do that when I made this cake.

I have to go off on a tangent for a moment here. When I was growing up, Charles in Charge was one of my favorite shows. On one episode in particular, Charles, played by Scott Baio, exclaims when referring to  a bowl of unbaked cake batter sitting in the kitchen:

GREAT! This is just great. Welcome home, Commander Powell! Would you like a sip of cake?

I just thought it was the funniest thing in the world. I burst out laughing every time I saw it, which was often in the days before DVRs and cable television. The episode, titled “Piece of Cake,” is available on YouTube and embedded below. Go to 05:33 for the moment I’m referring to.

  4. Week 30: Peach Cake

September 1, 2012 by Nina Spezzaferro

Are you familiar with America’s Test Kitchen? I haven’t watched the show in years, but I do enjoy following it on Facebook, Twitter, etc. I recently saw a photo for their version of Summer Peach Cake and it piqued my interest. I’ve been eating a lot of peaches this summer. Why note bake some into a cake? (more…)

  6. Week 28: Flourless Chili Chocolate Cake

August 19, 2012 by Nina Spezzaferro

A few months ago I baked a flourless chocolate cake. As I noted in that post, the recipe came highly recommended by my friend, Linda, who baked my Dr. Devil’s Food Cake for James Earl Jones. And she got the recipe from her friend, Lynne Silver. It was delightful. So when I wanted to make a chili chocolate cake, doing a flourless version based on that recipe seemed logical. (more…)

  7. Week 27: Tunnel of Fudge Cake

August 17, 2012 by Nina Spezzaferro

A few weekends ago my boyfriend, Chris, and I spent the weekend in Bridgehampton. I know, we’re very chic people. Anyway, I needed a cake to bring to our hosts’ home that would survive the train trip so I chose my go-to when a cake needs to travel – a Bundt! (more…)

  8. Week 26: Berry Trifle Cake

August 11, 2012 by Nina Spezzaferro

It was Fourth of July and I was having my annual gathering of friends over for an indoor barbecue and to watch the Macy’s fireworks on the Hudson. (more…)

  9. Cake Rant

August 5, 2012 by Nina Spezzaferro

One of this year’s low points – the flan disaster

One question about my cake project I get asked frequently is, “Are you sick of it yet?” Back in January or February, I’d have said no. Now, seven months in, my honest answer is “Yes! Is 2013 here yet?” However, baking seven months worth of weekly cakes just doesn’t have the same ring to it as a year does, so I must press on.

But not before having myself a little rant. (more…)

  10. Week 25: Cherry Jelly Roll Cake

July 20, 2012 by Nina Spezzaferro

This cake was a triumph for me. It was my first successful roll cake. You see, a couple years ago I tried to make a  Bûche de Noël, which involves the same method of rolling a flat, rectangular shaped cake, and it was a disaster. (more…)
